Red, White & Blueberry "Ice Cream"

​With the heat of the summer already rearing it's ugly head here in Texas, I'm gearing up with some fun and healthy cool-me-down treats.

The inspiration for this tasty little number came from one of my go-to sources.​ However, I wanted something that was a little easier and a lot more healthy!

Faux ice cream is so fun to play around with. I plan on making a lot of variations this summer with all sorts of fruits.​

Ask anyone that has been to my house, and they will tell you that I have boo-coos of bananas in my freezer at all times.​

I'm pretty banana-picky and my daughter goes in and out of phases between liking them and not. As soon as the bananas start to get brown speckles I toss those suckers into the freezer (peel and all) to use later for 'ice cream' or baked goods.

If you haven't frozen your over-ripe bananas before, you totally should!​ You can put them in with the peel and all... or pre-peel and slice them, place them on a baking sheet to freeze, then toss into a freezer-friendly ziplock for use later.

Yum! This would make a perfect summer BBQ dessert or even a fun treat for July 4th! You could even top a bowl with some granola and have this for breakfast. How refreshing would that be on a hot summer morning?

As you can see this makes 6 heaping bowls of 'ice cream', so you could absolutely ​get away with halving the portions for 12 smaller sized bowls.

The Skinny:
​Servings: 6 • Size: About 1 C. Red + 1/2 C. White + 2 Tbsp. Blueberries • Calories: 195.4 • Fat: 0.4 g • Carb: 50 g • Fiber: 8.7 g • Protein: 1.8 g • Sugar: 28.2 g • Sodium: 11.4 mg

Ingredients:
Red:
​4 C. Strawberries, Frozen
​2 C. Mixed Berries, Frozen
​1 1/2 C. Water (More if needed.)
​2 Tbsp. Stevia in the Raw (Or sweetener of your choice.)
​2 Tbsp. Sugar
​1/2 - 1 Tsp. Vanilla Extract

White:
​6 Bananas, Frozen & Peeled
1/2 Tsp. Cinnamon

Topping:
​3/4 C. Blueberries

Directions:
​​Combine the 'red' ingredients into a blender or food processor and blend until smooth and about the consistency of sherbet. Scoop into a bowl and set aside in the freezer. Rinse the blender or food processor. Combine the bananas and cinnamon in the blender or food processor until it's about the same 'ice cream' texture.

Divide the frozen blended berries among bowls. Top with the banana mixture. and sprinkle about 2 tbsp. of blueberries over each.

​Serve immediately and enjoy!
