Protein Pack
Yes, even though I work from home - I still tend to pack my lunches and snacks! Especially during the school year. Why? Because more often than not, when I don't have lunch ready to go... I've found that it's easy for me to forego lunch all together or settle for something that isn't always a good option. With snacks, it's the same way.
If my lunch is all made up and prepared for me, there isn't much of an excuse not to enjoy it. Once my little one starts school back up this next week, I'll be back in action at the gym... and let me just say that I'm really looking forward to it. I know that protein is something I'm going to need once I fall back into my routine of exercising and this protein pack is loaded with it!
Honestly I thought this protein pack would be more of a snack when I initially started planning, but by the end of it I realized how filling it was. In fact, it's so filling that it really could be used as a small lunch - which is what I've been using it for lately.
For this protein pack, I started with some Roasted Red Pepper Hummus. Store-bought or homemade will work just the same, so whichever you prefer will do! The deli turkey and hardboiled egg are where you get the power punch of protein from.
As a side note, I've never tried dragon fruit before but I've got to say it's pretty magical! I love that it's so similar to kiwi, but a lot more easy to open and get to the fruit. Kiwi can be a little bit of a struggle for me sometimes... even with my trick to peel them!
All in all this bistro box sticks to the mantra, 'Eat food. Not a lot. Mostly plants.' - since more than half of what's here is plant based.
One of the things that I love most about this protein back is that it's easy to toss together and stays good for 3-5 days. So you can feel free to make your lunch or snack ahead of time to have them ready to go through the week.

Ingredients:
8-10 Baby Carrots
1 Hard Boiled Egg
2 Oz. Reduced Sodium Deli Turkey
2 Tbsp. Roasted Red Pepper Hummus
1/3 Dragon Fruit (I halved mine and scooped out the fruit inside.)
Directions:
Place ingredients into a lunch or bento box and store in the fridge until ready to eat.
