Pomegranate Avocado
Think avocados are only something to enjoy in the summer? Hah! Think again.
These lovely pomegranate avocados make for a wonderful winter snack or even a perfectly fun and beautifully colored side dish.
That isn't to mention that these are so super easy to pull together and the bright and merry colors are more than impressive!
After a full day of over stuffing myself yesterday, I felt like I needed something lighter for lunch today. Something light, but full of flavor and that didn't require too much thought behind it. No room for wasted calories here!
A lot of times avocado can get a bad rap for it's high fat content. But, while that is true... the fat contained in avocado is somewhat unusual and provides many health benefits. It's heart healthy, anti-inflammatory, promotes blood sugar regulation, supports cardiovascular health, and has anti-cancer benefits!
Oh, and the pomegranates? They have some of the most powerful antioxidants of any fruit, have anti-cancer and immune supporting benefits, lowers blood pressure, lowers cholesterol, and even helps to relieve and prevent depression. Whoa! Now that's a super fruit!
Talk about a super food duo!
If you're feeling extra spunky, you can always add a little sprinkle of crumbled reduced fat feta cheese or even put this perfect fruit and vegetable mixture over a whole grain toast. Yum, yum.

Ingredients:
1 Avocado
1/4 C. Pomegranate Seeds
2 Tbsp. Red Wine Vinegar (Mine was infused with pomegranate.)
Salt & Pepper to Taste
Directions:
Not really much to go over here!
Half your avocado. Remove and discard the pit.
Top the avocado with some salt and pepper to taste and then add 2 tbsp. of pomegranate seeds over each.
Finally, drizzle the balsamic vinegar evenly over the avocado halves.
Serve right away and enjoy!
