Skinny Pizza Potato Skins
I gotta admit, my lunch today was pretty amazing. As you can see.
I've said it before, and I'll say it again... potatoes always seem to get a bad reputation. Maybe it's because the vast majority of people that eat them always go for the greasy fried versions of potatoes. But, honestly there's a lot of good packed into these things!
Potatoes are a good source of B6, potassium, vitamin C, and fiber! Oh, and did you know that they are actually fairly low in calories? A whole spud is about 160 calorie on average, not too shabby.
Plus, they're filling enough to keep you satisfied and energized to get through your day, which is something that I desperately need today!
I've had my share of potato skins before, but I wanted something with a little bit of an italian spin on it. Plus, I'm still trying to eat less gluten lately so... Ah-hah! Gluten free pizza bites. Perfecto!
These potato skins were basically like little mini deep dish pizzas, except... you know... not horribly unhealthy for you. In fact, there is nothing in here that's scary at all! I loaded these potato skins with a thick and hearty pizza sauce, cheese, and some pepperoni. Simple and familiar. But, feel free to use whatever toppings you typical desire on your pizza.
My daughter would have enjoyed sliced black olives and some mushrooms.
By the way, this would make for a perfect addition to any 'game day' spread! Easy and cheesy.
I served mine with a small italian style side salad to make for a well rounded lunch that I hadn't a single complaint about.
I really can't wait to play around with these a little more this week with my daughter and experiment with other toppings. She loves to build her own pizzas and I love to know that I'm feeding her healthy great tasting meals.

The Skinny:

Ingredients:
1 Medium Potato (I used a yellow potato.)
2 Tbsp. Thick & Hearty Pizza Sauce
2 Tbsp. Shredded Pizza Cheese Blend
1 Oz. Turkey Pepperoni, Sliced or Chopped
Salt & Pepper to Taste
Directions:
Pierce the potato all over with a fork and wrap in a damp paper towel.
Place in the microwave and 'cook' for 5 minutes (per potato) or until softened.
Alternatively you could bake or gill the potato. Point is, you just want it cooked through!
Preheat the oven on to 350 degrees f. and line a baking sheet with foil and give it a light spritz of non-stick cooking spray. Set aside.
While the oven is preheating, allow the potato to cool slightly before cutting in half.
Scoop out most of the potato, leaving about 1/4" thick 'shell' around all edges.
Line the skins up on the baking sheen and place into the oven to bake for 10-15 minutes to 'crisp' a bit.
Remove the skins from the oven and carefully fill each skin with 2 tbsp. pizza sauce, and then top with cheese and pepperoni (or whatever toppings you so choose!)
Place into the oven to bake for another 5-10 minutes or until the cheese has melted.
Carefully remove the baking sheet from the oven and allow to cool slightly before transfer the skins to a plate.
Serve right away and enjoy!
