Pizza Bite Eyeballs

Muahahaha! I love Halloween. It's my favorite holiday and it has been for almost all of my life. I think I enjoy it so much because there's a lot of excitement in the air. Especially when you have little ones! It's the start of the holiday season and everyone is ripe with anticipation for now. Plus, Halloween is generally the beginning of our cooler weather here in Texas. We're already down into the 80's on most days! Whohoo.

I've been working on some fun Halloween inspired bites this week and I think these Pizza Bite Eyeballs are a big winner! They are so easy to do and fun. Not scary. I even managed to get my 6 year old on board with them. After my 'scary' black Halloween spaghetti from last year, I thought I'd lost her on Trick-or-Treat eats, but these managed to get the seal of approval.

Since these are created with such few ingredients I wanted to be pretty particular about what I chose to lighten them up a bit. So, I went with a golden wheat biscuit dough and turkey pepperoni slices. In some instances swapping turkey isn't always idea, but it's one thing I always use instead of traditional pepperoni. Why? No one notices the difference and it saves me some calories! Win-win.

I used traditional black olives here because that's what I go to with my pizza, and these are pizza bites after all. Green ones would work just as well too, if that's more your jam though. These would definitely be a hit for any Halloween party spread, or just as a 'spooky' themed bite! Don't fret though, these could be made for any occasion. I'm thinking... game day and tailgating!

Yum! These pop-able bites are devoured and will likely be one of the first things to disappear at your scare-fest. Just be sure that when you are rolling the dough up around the cheese and pepperoni, that you seal off all the edges and leave no openings for the cheese to sneak out of. That sneaky sneaky obey gooey cheese.

I love that these are a perfectly fun non-scary Halloween bite that I can share with my daughter without seeming too spooky or over the top.

The Skinny:
Servings: 8 • Size: 2 Pizza Eyeballs • Calories: 235.4 • Fat: 8.2 g • Saturated Fat: 3.1 • Carb: 32.3 g • Fiber: 2.4 g • Protein: 9.7 g • Sugar: 6.3 g • Sodium: 972.1 mg

Ingredients:
1 (17.3 Oz.) Can Refrigerated Reduced Fat Wheat Biscuit Dough
4 Oz. Reduced Fat Block Mozzarella Cheese or Light String Cheese
32 Turkey Pepperoni Slices
1/4 C. Sliced Black Olives, Drained
Pinch of Italian Seasoning
1 C. Pizza Sauce (I used homemade.)

Directions:
Preheat the oven to 350 degrees F. and lightly coat the inside of a 8x8" or 9x9" baking dish with non-stick cooking spray; set aside.

Set the biscuit dough out and cut the biscuits in half to give you 16 dough pieces. Form each piece into a slightly rounded shape; set aside.

Prepare the 4 oz. of cheese by cutting it into 16 equal cubes.

Place 2 slices of turkey pepperoni and 1 cube of cheese into the center of each piece of prepared dough.

Roll the dough up to seal the cheese and pepperoni up inside the dough, leaving no openings.

Transfer the dough into the prepared baking dish.

Pat the olives dry and press one slice of olive into the top of each pizza roll; sprinkle with a pinch of Italian seasoning.

Place the dish into the oven to bake for 20-30 minutes, or until the dough is cooked and starting to turn golden brown on the tops and edges.

Remove the dish from the oven once done and allow to cool slightly before serving with your favorite pizza sauce. Yum!
