Easy Peanut Butter & Jelly Waffles

It never fails. Every year around back-to-school, I get stuck on the notion of PB&Js. In the past, I've made parfaits, oat bars, and even sandwich cookies in the theme of PB&J. This time thought, I wanted to put a spin on an old breakfast classic. The waffle!

Of course, speed and ease are a huge thing with back-to-school. Especially in those first couple of weeks when you're busy getting back into the routine and setting yourself and your kids up for a successful school year. It's a lot of work, mommas. I know it! That's why I wanted to make these Easy Peanut Butter & Jelly Waffles.

And that's exactly where these Waffles really shine. I started out with a protein packed boxed mix. Why? Again, the name of the game right now for survival is ease and speed! To really get that peanut butter taste in there, I loaded the batter up with just that; peanut butter.

I knew that traditional syrup wouldn't do on it's own as a topping. So I created a honied peanut butter and a honied jelly to drizzle on the top. Followed up with some fresh berries and fresh cracked peanuts.

As you can see, the end result was pure bliss. Peanut butter and jelly in a waffle form that will keep you full and happy through the chaos of back-to-school madness.

The Skinny:
Servings: 6 • Size: 1 Waffle • Calories: 168 • Fat: 7 g • Saturated Fat: 1 g • Carb: 22 g • Fiber: 1 g • Protein: 6 g • Sugar: 5 g • Sodium: 287 mg

Ingredients:
1 C. Dry 'Protein Packed' Waffle Mix (Such as Kodiak Cakes, etc.)
1 C. Cold Water
1/4 C. + 1 Tbsp. Creamy Peanut Butter
1 Tbsp. 50/50 Honey Blend, Divided
1 Tbsp. 'No Sugar Added' Strawberry Jelly/Jam
6 Fresh Strawberries, Sliced

Optional Toppings: Peanuts

Directions:

Set your waffle iron to preheat.

In two small bowls, mix together 1/2 Tbsp. 50/50 Honey with 1 Tbsp. Peanut Butter and in the other bowl 1/2 Tbsp. 50/50 Honey and 1 Tbsp. Strawberry Jelly; set side.

In a medium mixing bowl, whisk together the 1 C. Dry 'Protein Packed' Waffle Mix, 1 C. Cold Water, and 1/4 C. Peanut Butter. Do not over mix.

Lightly coat the waffle iron with non-stick cooking spray.

Scoop about 1/4 C. of the batter per waffle onto each section of the waffle maker, close and allow to cook. Rinse and repeat for the remaining batter. (I got right at 6 waffles.)

Divide the waffles evenly among plates as they are done, topping each with a drizzle of the honey peanut butter and jam.

Top it all off with sliced strawberries and some peanuts if desired. Enjoy right away!
