Oatmeal Raisin Skillet Cookie

Cookies just don’t get more simple than this. Not only is this Oatmeal Raisin Skillet Cookie baked in a skillet, it’s whipped up all in one bowl. That means a whole lot less dirty dishes to deal with, and a whole lot more time to spend enjoying this delicious cookie. And let’s face it, saving time and energy at the end of the school year is VITAL.

This oatmeal cookie has all the goodness of any oatmeal cookie, and none of the guilt. I mean, how can you feel guilty about eating oatmeal and raisins?

This cookie is lightened up by first swapping out 2/3 of the sugar for natural sweeteners and blends. Any sort that measures cup for cup like sugar that you like will work here. And of course, being an oatmeal raisin cookie means that it’s loaded up with plenty of oatmeal and raisins.

Originally I had started cutting the cookie up, but then on second thought I scooped ice cream on top of the warm fresh baked goodness and just started to eat it with a spoon. No regrets.
