Nordic Lunch Box
Sometimes simple is the best. This light little lunch is Nordic inspired. It’s easy-peasy with just a few clean ingredients; making it perfect for meal prepping and making ahead for the week! The original ‘boxed lunch’ that I got the inspiration for this lunch box for was made with a smoked salmon. I’m not a seafood eater though, and with St. Patrick’s day just around the corner, I thought deli sliced corned beef would be the next best option!
The fun thing about this lunch is that you can do with it as you please. Pile it all onto the crackers for one delicious mixed bite. Or keep it all separate and enjoy as a finger-food grab-and-go lunch.
I’ve always got hard boiled eggs in my fridge. They’re pretty much a staple in this house. So naturally, they had to be included in this box. Added protein! And the was a crackers? Well, they remind me a lot of that Nordic bread that I made a while back.
I couldn’t let this lunch go without some green veg in there too. So. Zucchini to the rescue. Of course, at the end of the day, I’m not really sure I can call it a ‘Nordic’ lunch box, but… that’s just what we’re rolling with today.
This is a fairly high protein and lower calorie lunch. I’m not at all mad with the amount of carbs here either. At the end of the day, it’s a great little lunch for March with it’s corned beef and simple whole grain crackers.
