Mixed Berry Salad

This salad has been my lunch regularly for about two weeks now. I just can't get enough of it! Everything I love the most is in there. Fresh berries, blue cheese, spinach, and this amazing Energy Crunch Trail Mix. I found the mix at my local grocery store, HEB. It has soybeans, dried cranberries, almonds & pumpkin kernels.

When it started out, I was using a bottled dressing. But this week I decided to switch it up and make my own - which turned out fabulous and even more healthy!

I like to serve this salad with a small dish of low fat cottage cheese on the side for a bit of added protein and to cut through some of the sweet and tartness of the dish.

All in all, there is nothing I would change about this salad and I can honestly see myself eating it all through spring and summer. I've got to be bikini ready after all!

Yum. Look at that chaotic and perfectly blissful mess.

The Skinny:
Servings: 1 • Size: 1 Salad • Calories: 253.1 • Fat: 11.5 g • Carb: 30.6 g • Fiber: 5.6 g • Protein: 8 g • Sugar: 16 g • Sodium: 260.9 mg

Ingredients:
2 C. Baby Spinach & Tender Reds
1/4 C. Fresh Strawberries, Quartered or Diced
1/4 C. Fresh Blackberries
1/4 C. Fresh Blueberries
1/4 C. Fresh Raspberries
2 Tbsp. Reduced Fat Bleu Cheese
2 Tbsp. Trail Mix Trail Mix (Soybeans, Cranberries, Almonds & Pumpkin Kernels.)
2 Tbsp. Skinny Raspberry Vinaigrette

Directions:
Toss it all together how ever you like.
