For me, this week has been all about Tex-Mex flavors. Seriously, I think nearly every meal aside from breakfast so far has been Tex-Mex inspired, and today was no different! One of my most adored 'guilty pleasures' is a Mexican Pizza. I'm always looking for new and clever ways to turn my would-be guilt into something productive.
So, I gathered up my handful of what has come to be staple ingredients together, to make a Mexican Pizza that is not only better-for-you, but also into an easy snack or appetizer! These are quick, tasty, and definitely curb that Tex-Mex craving.
The first thing I did was figure out the base for my mini pizzas, and RITZ Original Fresh Stacks were the perfect option! Being a busy mommy of a 5 year old means that I always have crackers on hand. What I love about RITZ Fresh Stacks the most is that they come in smaller wrapped stacks which helps to keep them fresh, crisp, and perfect for snacking both at home and on-the-go too. To make these little bites better-for-you, I used reduced fat low sodium refried black beans as a base on the RITZ Original, followed by seasoned extra lean ground beef. With another cracker, a touch of red enchilada sauce, shredded cheese and a sprinkle of fresh pico and you have yourself a perfect little snack stack!

The Skinny:

Ingredients:
1/4 C. Fat Free Refried Reduced Sodium Black Beans
16 RITZ Original Crackers
1/4 Lb. Extra Lean Ground Beef, Cooked
1/4 Tsp. Salt-Free Southwest Seasoning
2 Tsp. Red Enchilada Sauce
1/4 C. Reduced Fat Shredded Mexican Cheese Blend
1/4 C. Fresh Pico
Directions:
Preheat the oven to broil and cover a baking sheet with aluminum foil for easy clean up; set aside.
Get your RITZ Original Fresh Stacks ready to go! I got mine at my local Walmart in the cracker and chip aisle. I used Original, but if there's another variety that is more up your ally, feel free to change it up a bit here!
Mix together the meat and 1 tsp. Salt-Free Southwest Seasoning; set aside.
Set 8 of the crackers out and top each with 1/2 tbsp. beans, and 1/2 Tbsp. of the seasoned beef.
Top each with another cracker to have 8 stacks total still; followed by 1/4 Tsp. enchilada sauce.
Finally, top with 1/2 Tbsp. cheese over each 'pizza'.
Place the baking sheet in to broil for just a few seconds to get the cheese nice and melted.
Top each with 1/2 Tbsp. pico and enjoy right away.
