Mini Air-Fryer Breakfast Tacos
My week is a little chaotic. Okay, more than a little. But that doesn’t mean that I’m skipping out on breakfast. After waking up at 5 AM, taking my little to cheer practice, walking for an hour, then feeding 30+ cheerleaders their breakfast, that’s when it’s time for my breakfast. And since I’ve been in a savory breakfast kind of mood, I thought some breakfast tacos sounded perfect.
These Mini Air-Fryer Breakfast Tacos are where it’s at. They’re crispy, and cheesy, and delicious. Of course I’m always looking for an excuse to use these mini street taco tortillas too. I left these tacos about as simple as they could be with all the fan favorites of bacon, egg, cheese, and some pico.
By using the air-fryer, you get a perfectly crispy taco shell with some chew still in the middle. And the cheese is perfectly melted and keeps it all together. It’s a beautiful thing and a great thing to come home and take the time to put together for myself.
