The end of Mermaid week is upon us! I've saved the best for last with this Mermaid 'Seaweed' Wrap. There is a long history behind this wrap too! It's special to my family because it's been in the summer rotation for about 5 years now! Yep. That's just how good this wrap is. One thing I love most about it is that it's so versatile; making the perfect lunch box addition, summer lunch or even as a light dinner. It's perfectly 'meal prep' friendly and full of wholesome goodness.

I've dubbed it the 'seaweed' wrap since I like to use the bright and colorful spinach tortilla to wrap everything all up in. On the inside, I've loaded this wrap up with plenty of fun and vibrant mermaid inspired bits. The first layers are hummus and a low fat cream cheese, followed by carrots, tomatoes, spinach, and my favorite part, Chopped Eckrich Honey Cured Ham! It's all pulled together with some reduced fat feta and rolled to perfection.

I'm a huge fan of the deli counter, y'all. I'm able to get what I want, in the amounts I want, and in the cut that I want too! Nothing goes to waste this way since I get my perfect portions. Plus, it's a high quality option that is perfect for back-to-school.

One of our family staples is Eckrich Deli Meats from the deli counter at Walmart. Eckrich Hams are specially trimmed for consistent quality and feature a wide selection of flavors. It's gluten free, and there's a full line of quality natural smoked and natural juice hams. For this wrap here, I went with the honey cured ham since it's my little girls' favorite. But, the Eckrich Cooked Ham and Eckrich Virginia Brand Ham are good options too!

If you're making this ahead of time, just put it all together, roll it up, and place it into an airtight container in the fridge. It'll stay good and fresh for a good 3-5 days, making on-the-go summer meals or back-to-school lunch a breeze!

The Skinny:
Servings: 4 • Size: 1 Prepared Wrap • Calories: 401.6 • Fat: 14.8 g • Saturated Fat: 5.5 • Carb: 45.5 g • Fiber: 5.3 g • Protein: 23.2 g • Sugar: 5.8 g • Sodium: 1595.9 mg

Ingredients:
4 Large Spinach Tortillas
2 Oz. Neufchatel Cream Cheese
1 Green Onion, Chopped/Sliced
1/2 C. Hummus (I used a roasted red pepper flavor.)
1 C. Grated Carrots
1 C. Sliced Cherry/Grape Tomatoes
1/2 Lb. Chopped Eckrich Honey Cured Ham
1 C. Chopped Baby Spinach
2 Oz. Crumbled Reduced Fat Feta Cheese
Salt & Pepper to Taste

Directions:

In a medium bowl, combine the 1/2 C. Neufchatel Cream Cheese and 1 Green Onion.

Lay out the 4 Large Spinach Tortillas and divide the cream cheese mixture evenly between each; spreading to cover the most of the tortilla. Rinse and repeat with 2 Tbsp. Hummus per tortilla.

Top each wrap with about 1/4 C. Grated Carrots and 1/4 C. Sliced Cherry/Grape Tomatoes, followed by 1/4 C. Chopped Eckrich Honey Cured Ham, 1/4 C. Chopped Baby Spinach, and 1 Tbsp. Crumbled Reduced Fat Feta Cheese.

Roll up each tortilla tightly (though not tight enough to puncture anything through the tortilla.)

Cut in half and enjoy right away!
