Matcha Waffles (Gluten Free)
So, this is what I've been up to pretty much each morning this week. I've made these waffles three times now, adjusting the recipe and tweaking it to get it to where I wanted it to be. The first time I made them as a test run, they turned out beautifully. But, the second time I made them - they were a huge flop.
Yes, even I make mistakes in the kitchen!
That could have been mostly my fault though. Honestly, my heart wasn't in it that morning and my mind was elsewhere and focused on other things going on in my life. I'm pretty sure in looking back that I left something out at some point and ended up with a waffle iron full of raw inedible goop. Whoops!
This was my third attempt with these waffles after a few final changes and a more careful eye for my measuring and accounting for each ingredient.
These waffles are packed with matcha, which is what gives them their beautiful green color. Matcha is a dried green tea powder concentrate that is amazingly good for you. It has less caffeine than regular green tea or coffee, but gives you the same much needed boost of energy which lasts for a longer time. You also don't get any caffeine jitters with matcha.
Since matcha is in a dry powder form, it's perfect for drinking and cooking or baking. So, I've been playing around a lot with integrating it into certain breakfast dishes such as this Skinny Matcha Granola. Yum!
This is also a batter that is surprisingly quick to pull together since it requires very few ingredients. What's better is that they are also being vegan and gluten free!
You may have to play around a bit with the consistency of the batter. I've found that not all gluten free flours are created equal. You'll want to be sure that the gluten free flour you pick up is 'all-purpose' and not meant for just baking.
I served mine with some fresh fruit and a sugar free maple style syrup. Because... yes. All the yes.

Ingredients:
1 Heaping C. Gluten Free All-Purpose Flour
2 Tsp. Matcha (Dry Green Tea Powder)
1 Tsp. Baking Powder
1/4 Tsp. Baking Soda
1 1/4 C. Unsweetened Almond Milk
1 Tbsp. Melted Coconut Oil
Directions:
Preheat your waffle iron or counter top grill with the waffle inserts.
I set mine on medium-high.
Whisk together the 1 C. Gluten Free Flour, 2 Tsp. Matcha (Dry Green Tea Powder), 1 Tsp. Baking Powder, and /4 Tsp. Baking Soda.
Add in 1 1/4 C. Unsweetened Almond Milk and 1 Tbsp. Melted Coconut Oil; stir until just combined.
Lightly coat the waffle plates with non-stick cooking spray.
Pour about 1/2 C. of the waffle batter onto one of the hot waffle iron sections (so 1/2 C. batter per waffle.)
Heat until cooked through and the edges of the waffle are starting to crisp slightly.
Remove the waffles and enjoy right away!
