Low-Carb Broccoli Cheese Dip (Slow Cooker)

Everyone should know by now that I am a cheese freak. A cheeseoholic. A cheese master. ...I guess one could even say that I'm a bit... cheesy. Buh-dum-psssh. Queso is usually my go-to cheesy wonder of amazingness, but I thought today I would change it up a bit and go with something a bit more traditional and Americanized.

What's more American than broccoli and cheese? Besides Apple Pie or Baseball. Neither of which would make for a very good cheese dip.

This Low-Carb Broccoli Cheese Dip is easy to make too. Roast your veggies, whisk cheesy goodness, and toss it all into the slow cooker to cook for a couple of hours to melt into a perfect dip!

You can dip and dunk raw veggies, crackers, or even some toasted slices of baguette bread into this hearty dip to your heart's content. It's great as an appetizer, snack, or even part of a game day spread or potluck.

See? You could even venture to say that you're getting a serving of vegetables with the cheese here. It cancels each other out then right? {Wink, wink.} Even though this dip is low-carb and rather low on the calories too, just be sure to keep moderation in mind!

This dip might also be able to be baked in the oven (as opposed to cooking in the crockpot), but I haven't yet tried to make it that way. I will update once I have a definitive answer! But for now, I'd suggest for anyone wanting to try the oven method for themselves: following the steps up to the crockpot, but instead, use a baking dish and bake at 350 for maybe 30 minutes.

The Skinny:
Servings: 10 • Size: About 1/2 Cup • Calories: 125 • Fat: 8 g • Saturated Fat: 4 g • Carb: 7 g • Fiber: 1 g • Protein: 6 g • Sugar: 2 g • Sodium: 311 mg

Ingredients:
1 Tsp. Extra Virgin Olive Oil
1 Yellow Onion, Chopped or Minced
6 C. Broccoli Florets
1 (10.5 Oz.) Can of Condensed Broccoli Cheese Soup (Organic if possible!)
1 C. Shredded Cheddar Cheese
1/2 C. Reduced Fat Milk
1/2 C. Sour Cream (Plain Fat-Free Greek Yogurt)
1 Tbsp. Worcestershire Sauce
1 Tsp. Garlic Powder
1 Tsp. Basil

Directions:

Heat the oil in a large skillet over a medium-high heat.

Add the yellow onion and cook for 4-5 minutes or until translucent and tender.

Add the 6 C. broccoli florets to the pan and continue to cook for another 4-5 minutes; remove from the heat and set aside.

Place the 10.5 Oz. of Condensed Broccoli Cheese Soup, 1 C. Shredded Cheddar Cheese, 1/2 C. Reduced Fat Milk, 1/2 C. Plain Fat-Free Greek Yogurt (Or Sour Cream), 1 Tbsp. Worchester Sauce, 1 Tsp. Garlic Powder, and 1 Tsp. Basil into the base of the slow cooker and stir to combine well.

Transfer the cooked veggies to the crock pot and stir again to mix well.

Cook the dip on LOW for 2-3 hours or until the broccoli is tender and the cheese has all melted.

Season with salt and pepper to taste.

Set the tip to a warm or low heat until served.

Garnish with additional fresh parsley if desired and enjoy!

NOTE: You DO NOT want to OVERHEAT this dip or it will start to separate. Always cook on LOW or WARM.
