Wedge Salads are a classic, a traditional starter or appetizer that you will find commonly on just about anyone's dinner table. After making my Healthified Gorgonzola Port 'Blue Cheese' Cheese Dressing a few weeks back, I knew that it would be the perfect dressing for a wedge salad. Not just any wedge salad though. I wanted one that was loaded. Fully. With all of the fun naughty bits.
I'm talking bacon, egg, cheese, and of course... tomatoes. This is the wedge salad of my dreams and that homemade dressing is an absolute must! It took me a few good years and a lot of trial and error to get the most amazing healthified blue cheese dressing recipe that you'll come across.
Don't take this Loaded Wedge Salad lightly. It's a monster of piled up goodness, as was its intent. Although I'm classifying it as a starter or appetizer, it could easily pass for a full-on meal at lunch or a major part of any dinner.
I served mine with some stuffed mushrooms and called it a day. But, it would also pair nicely with a soup or another snack sort of appetizer. Perhaps even a bruschetta and nice crunchy bread toasties!
Aren't a fan of blue cheese? Swap out the dressing for a ranch and the blue cheese crumbles for some cheddar!
No matter the dressing or the cheese, this is a super versatile salad that's quick and easy to make while also being rather guilt-free. Especially for being fully loaded.
