Lemon, Blueberry & Poppy Seed Parfait

So, remember that Lemon Poppy Seed Granola from a couple of weeks ago? And how I told you that I had big plans for it? Well, here you go!  My idea all along for #TopItTuesday was to incorporate it into some sort of super fabulous luscious lemon parfait. And what goes better with lemon other than blueberries? I got some gorgeous local blueberries in last week, and just knew that they would be the perfect addition to this particular parfait.

I'm so happy that it's Spring time. I love the mild weather and the sudden influx of seasonal fruits and berries too! Nothing says Spring time to me more than lemons and blueberries though. There's just something about that bright burst of citrus flavor that I can't help but crave being paired with those sweet blueberries.

This parfait is super simple to make and as tasty as could be. To keep it lightened up and more wholesome, I decided to make it dairy-free by using the new Silk Almond Dairy-Free Yogurt Alternative. It comes in 5 flavors including plain, vanilla, strawberry, peach and dark chocolate coconut. Plus, each one has 5-6 grams of protein from almond butter; which also gives it it's smooth, creamy texture. Right now you can even get a coupon to use at your local store.

I used the vanilla flavor today since I thought that it would be the best option for this particular parfait use. Yum! I loved that I could actually see the flecks of vanilla bean there in the Silk Almond Dairy-Free Yogurt Alternative. Vanilla bean definitely has to be one of my weak points. It just makes everything so much more flavorful.

All in all, this parfait is perfect for Spring and for #TopItTuesday - where the whole idea is what your favorite way to top your Silk Almond DFYA!

Like I said, I used my homemade Lemon Poppy Seed Granola, which was amazing with this parfait and super easy to make. But, you could really use any sort of low fat granola for your choosing.

Ingredients:
5.3 Oz. Vanilla Silk Almond Dairy-Free Yogurt Alternative
2 Tbsp. Lemon Curd
1/4 C. Low Fat Granola (I used my homemade Lemon Poppy Seed Granola.)
1/4 C. Fresh Blueberries

Directions:

Layer all of the ingredients in whatever way sounds good to you!
