Skinny Jalapeño Popper Deviled Eggs

Last weekend when my family and I made the 3 hour round-trip out of the way just for a coffee cake, we had the delight of meeting the woman behind said amazing coffee cakes after several years of ordering from her. She was the SWEETEST lady ever and as we were picking up our cakes from her home, she was in the middle of cooking what she called ‘wash day’ dinner.

So what is wash day dinner? Well, it’s a simple old-fashioned southern inspired meal that they used to cook on… you guessed it, wash day! Usually it’s a pot of beans, cornbread, a cobbler, and some deviled eggs. A perfect meal for a cool almost winter day!

Of course, I couldn’t just make deviled eggs. I wanted to make them a little more healthy and creative. So, what’s a girl to do? Jalapeño Popper Deviled Eggs, it is! These deviled eggs aren’t traditional. They’re a bit outside the box, but not so far though that they aren’t recognized as deviled eggs.

I lightened these deviled eggs up by using a lot less mayonnaise, subbing in some greek yogurt. Outside of that, they’re loaded up with bacon, cheese, and pickled jalapeños to really get that ‘popper’ taste in there!

These Skinny Jalapeño Popper Deviled Eggs will be the perfect addition to our ‘wash day’ dinner tonight. We already had to taste test a few of them, and I’ve got to say… they’re pretty damn amazing!
