Irish Pub Skewers
It’s the first day of March and St. Patrick’s Day is coming up quickly! These Irish Pub Skewers are super simple and easy to make. In this house, we love finger foods, and these small bites with an Irish nod to them are perfect for entertaining around St. Patrick’s Day.
These little bites start out with a piece of corned beef and are put together with some Irish cheddar, a pickle, and some Brussel sprouts to end it. They are great for dipping and dunking into a mustard or even thousand island style of dressing.
I kept these skewers a bit more health conscious by using as much vegetables as I could without losing the ‘Irish Pub’ theme that I was going for. Honestly, a lot of what’s on these skewers is a play on a reuben, sans the bread of course.
These tasty bites could be made ahead of time and kept covered in the fridge until ready to be enjoyed. These skewers would be great served with a dark Irish beer and some Irish Soda Bread! Though almost any other Irish inspired dish that you serve these with would be great.
I wanted steamed Brussels, but you could cook (or not cook) them any which way that you prefer and the dipping sauce is completely up to you. I am in love with a whole grain mustard, but the thousand island or a spicy brown mustard would also be great!
