Instant Pot Poached Eggs

It’s been a good long while since I had some eggs for breakfast and if I’m being very honest? I’ve never had a poached egg before in my life. I’ve had them just about every other way there is other than poached. So, this morning I decided to try my hand at it. However it’s summer and I’m lazy. Instant Pot to the rescue!

Oh, how many times the Instant Pot has saved me.

These eggs are cooked up in no time and require NO technical or cooking skills what-so-ever. That’s right. these poached eggs are cooked right in the pressure cooker and you can play around with the timing to get them exactly where you want them as far as yolks go.

As you can see, the Instant Pot does a great job. All you needs is eggs, a pressure cooker, and a silicone mold of some sort. I used the same mold that I use for my egg bites. These guys only take 4 minutes to cook and then with a quick release they’re basically perfect.

I like my yolks a little less on the runny side and a bit more on the gel side. So, I let mine sit for a few seconds longer once the quick release was done. I served them over some avocado toast, because that' just feels like what you’re supposed to do these days.
