With back-to-school just around the corner and the end of summer breathing down my back with an ever tightening schedule, this easy one pot meal is just what I needed! Why a one pot meal? It keeps things simple. I'm left with one dirty dish and plenty of happy, full tummies at the end of the night. What's better is that I only need to focus on one pot for cooking. Yay!

This meal is basically hands off for 30 minutes, giving plenty of time to get other needed things done in between stirring and checking. One of my favorite things about this soup though, has to be that it's super packed with flavor and loads of sneaky vegetables; making it easier for you and healthier for the family at the same time.

So how in the world did I manage to pack so much flavor into this soup without having to stand over the stove for hours on end? Easy! Prego Italian Sauce was used for the base of this recipe. I love that it tastes homemade and has the perfect balance of sweet and savory Italian flavor. It's simple and easy to use, easily being incorporated into many Italian dishes or used all on it's own.

What about the hidden vegetables? How did they get in there? The answer there is simple as well, V8! I know that might sound a little outside of the box, but hear me out - no one in my family was any the wiser (not even my picky little girl!) Not only did it give a needed boost of vegetables, it also added another layer of flavor.

The Skinny:
Servings: 8 • Size: About 1 1/2 Cup • Calories: 194.3 • Fat: 3.2 g • Carb: 21.1 g • Fiber: 4.2 g • Protein: 22.8 g • Sugar: 12.4 g • Sodium: 629.7 mg

Ingredients:
1 Red Bell Pepper, Chopped
1 Yellow Onion, Chopped
1 Lb. Extra Lean Ground Turkey
4 Garlic Cloves, Minced
8 C. Unsalted Chicken Stock
24 Oz. Prego Traditional Italian Sauce
15 Oz. 'No Salt Added' Crushed Tomatoes
1/2 C. Small Whole Wheat Noodles
2 Tbsp. 'No Salt Added' Tomato Paste
3 Tsp. Salt-Free Dry Italian Seasoning (I used Oregano, Basil, and Parsley.
1 Bayleaf
Salt & Pepper to Taste
Fat Free Ricotta (Optional)

Directions:

Lightly coat the inside of a large stock pot with non-stick cooking spray and add the chopped red bell pepper and onion to cook over a medium-high heat until the onions are started to turn translucent.

Add in the 1 lb. ground turkey and 4 minced garlic cloves, continue to cook until the turkey is heated through and browned.

While I was at my local Walmart getting my ingredients, I also found V8 + Energy along side the original V8. I grabbed the Pomegranate Blueberry flavor because they're two of my favorite fruits. V8 + Energy is nutritious, and offers a combined serving of fruit and vegetable while tasting only like fruit!

For only 50 calories a serving it gives you a natural boost of energy from green tea, something that won't cause a crash later.

Once the turkey is cooked, stir in the remaining ingredients; 8 C. Unsalted Chicken Stock, 24 Oz. Prego Traditional Italian Sauce, 15 Oz. 'No Salt Added' Crushed Tomatoes, 1/2 C. Small Whole Wheat Noodles, 2 Tbsp. 'No Salt Added' Tomato Paste, 3 Tsp. Italian Seasoning, and 1 Bayleaf.

Bring the pot to a boil then reduce the heat to simmer for about 30 minutes or until the soup has reduced and the noodles are cooked.

Divide the soup evenly among bowls and serve right away.

Feel free to add some fat free ricotta or fresh basil leaves and enjoy!
