This past week was a whirl wind of fun and now with my post birthday party exhaustion, I decided that it was time to focus on a quick and easy 30 minutes meal and creating Real Flavor Real Fast. There isn't much that more real or fast than a sandwich, but I wanted to of course put my better-for-you twist on it.

Enter this Healthified Cuban Slider. I've taken the traditional Cuban sandwich and turned it into a slider while also making a few more health conscious swaps. These little sliders are perfect for a quick meal that requires little effort and no prep. work in the kitchen!

The first thing I did for this slider was go for a whole wheat bun, mine were at a mere 100 calories each. I then decided to go with a leaner cut of pork - the tenderloin, of course! I picked up a Smithfield® Marinated Fresh Pork Peppercorn & Garlic Tenderloin and was on my way. Smithfield® Marinated Fresh Pork allows you to create delicious meals for any night of the week and are easily prepared since they are already marinated! The best part is that it is available in a variety of flavors, so you can feel free to make it your own; whether it be a Tenderloins, Loin Filets or Roast.

By the way, this one tenderloin gave me three days worth of meals too! Cuban Sliders, Tenderloin Sweet Potato Nachos, and Smothered Pork Burritos.

For the rest of the slider I used a low sodium thin sliced deli turkey instead of the original ham, and topped it all off with some reduced fat swiss cheese, pickle chips, and yellow mustard!

Letting these sandwiches cook in the oven and under foil means that you get a super melted cheese and a nice soft bun. Plus, the oven is doing almost all of the work for you here as far as these sliders go; which is particularly nice on a busy weeknight!

I absolutely loved that my Smithfield® Peppercorn Garlic Tenderloin was already marinated and ready to go with the perfect blend of spices, yum! I have to say, it was definitely the star of the show.

The Skinny:
Servings: 6 • Size: 1 Slider • Calories: 263.8 • Fat: 11 g • Carb: 18.7 g • Fiber: 1.3 g • Protein: 25 g • Sugar: 3.2 g • Sodium: 468.8 mg

Ingredients:
1 Smithfield® Peppercorn Garlic Tenderloin
1 Tbsp. Extra Virgin Olive Oil
6 Wheat Slider Buns
4.5 Oz. Deli Turkey
6 Thin Slices Reduced Fat Swiss Cheese
6 Dill Pickle Slices
6 Tsp. Yellow Mustard

Directions:
Preheat the oven to 425 degrees F. and place a heat-proof skillet (such as cast iron or ceramic) in the oven (allowing the skillet to preheat along with the oven.)

While the oven is preheating, get your tenderloin out to start warming up a bit at room temperature.

I got my Smithfield® Marinated Fresh Pork at my local Walmart in the refrigerated meat section with the pork.

Remove your preheated pan from the oven and add 1 tablespoon of olive oil, swirling the olive oil to coat the pan; carefully add the pork and place the dish in the oven.

Roast for about 20 minutes at 425 degrees F. or until a meat thermometer registers at least 145 degrees F. (The temp. will go up and the meat will continue to cook as it rests.)

Once the pork is cooked through, remove it from the oven and allow it to rest before slicing into 1 oz. pieces.

Reduce the heat of the oven down to 325 degrees F.

Lightly coat the inside of an 8x8" or 9x9" baking dish with non-stick cooking spray and line the bottom with the bottom half of the wheat slider buns.

Layer each with 1 oz. tenderloin, 3/4 Oz. turkey, 1 slice swiss cheese, 1 pickle chip, and 1 tsp. mustard.

Top them all off with the top part of the bun and cover with foil; place the dish into the oven to bake for about 10 minutes or until the cheese is good and melty.

Once done, remove the dish from the oven and enjoy right away!
