Halloween Antipasto

This Halloween Antipasto is basically a black and orange version of my original Skinny Antipasto Salad. I went with some red lentil and black squid ink pasta for the orange and black colors and also chose some colorful tomatoes that came in a pack with orange and dark ‘blood red’ ones. Black olives were a given. And to break up the colors there’s some fresh mozzarella and cauliflower.

It’s a very easy dish to make that I honestly use as a meal in itself since there’s all the pieces of a complete meal-in-a-bowl. Plus, it can be made ahead of time and also is great as a leftover! Of course, you could also use this in place of pasta salad as a side dish too!

Of course, if you can’t find black squid ink pasta, you can also use black bean noodles or even just all red lentil noodles too. I also went and got a couple of extra thick slices of the hard salami from my deli, but that’s just personal preference over the thin sliced pieces.

The more ahead in the day this is made, the better since the dressing gets to soak into the noodles and also the cauliflower the longer that it sits. It’s definitely a fun and tasty way to get a pasta salad on the Halloween menu!
