Grilled Feta Skewers

The rain here in Texas has been crazy these last few days, and we still have more to come. Houston, you're in my thoughts! Despite the turn of weather (April showers bring May flowers...), I'm still getting my grill on this week. One way or another.

To add a little color and brightness to my life during this rather gloomy day, I decided to grill up these veggie-full skewers that couldn't be any more easy to make, or any more delicious. Let's face it, I'm a sucker for cheese is just about any form or fashion.

For these skewers, I used my mandolin to slice some fresh zucchini really thing (on the 1/8th" setting.) I then sliced up my block of reduced fat feta accordingly and pinned all of them through with skewers with alternating grape tomatoes.

The end results were these perfectly beautiful skewers that take all of 5-10 minutes to prepare and grill. They would make for a pretty awesome appetizer, especially for a barbecue or cookout. Mine were on the grill just long enough to start getting the wrapped pieces of feta to become warm and to the point of almost becoming 'gooey'. Almost.

These were so good that I actually made them into my lunch; serving them with a few multi-grain chips and a side of light greek dressing for any needed dipping. Though, I'll just say it now... the dressing wasn't needed here. There's so much natural flavor to these skewers that  just used it as a bonus to a bite or two.

I made these on my indoor grill for obvious reasons, but these would turn out just as good over an outdoor grill too!

The Skinny:
Servings: 2 • Size: 1 Skewer • Calories: 66.1 • Fat: 3.6 g • Carb: 3.7 g • Fiber: 0.6 g • Protein: 5.6 g • Sugar: 1.9 g • Sodium: 355 mg

Ingredients:
1/2 Medium Zucchini, Sliced Thin (I got about 4 Slices +)
8 Cherry/Grape Tomatoes
2 Oz. Reduced Fat Block Feta, Sliced/Cubed
Salt-Free Seasoning of Choice (I used a 'Table' seasoning.)

Directions:
Preheat your grill (whether indoor or outdoor.)

I had to use my indoor one today cause we've got torrential rains here in Texas!

While the grill is warming up, roll the feta up carefully inside of the zucchini and skewer everything how you see fit.

(I cut off the excess zucchini wrapping around the feta and skewered that too!)

Place the skewers over the grill and cook about 1 minute per side, flipping 3-4 times to get all sides nice and cooked.

Remove from the grill and enjoy right away!
