Green Eggs & Ham

In honor of Dr. Seuss's 111th birthday being earlier this week, and with St. Patrick's Day right around the corner, I decided to make a play on Green Eggs & Ham!

St. Patrick's Day is actually one of my favorite holidays, and it also happens to be my dad's birthday. Happy Pre-Birthday, Daddy! My dad always thought it was fun to make Green Eggs & Ham for breakfast around his birthday. So, the idea for my take on Green Eggs & Ham was definitely inspired by him, even though I'm pretty sure that you makes his a whole lot differently.

My Green Eggs & Ham are a little different than what you might of think of when you hear 'Green Eggs & Ham'; in the sense that my eggs nor my ham will be made green by way of any food coloring. No, no. Instead, I've opted out of food color all together today and have gone with the perfect natural green color associated with Skinny Spinach & Basil Pesto!

This is definitely a healthier choice since there are a lot of eally scary things being said about unnatural food coloring out there. So, I'm trying to stay away from it as best I can for right now.

Now, I used my own Skinny Spinach & Basil Pesto, but you could really use and pesto out there that you choose. Just be sure to adjust the nutritional information accordingly to reflect your choice of pesto

This is a super simple dish that doesn't take much time at all and is a fun thing to serve anytime. But, especially when leading up to St. Patrick's Day! To keep with the Irish theme, I gave mine a little sprinkle of some Irish Cheddar as well. De{light}ful!

The Skinny:
Servings: 1 • Size: 1 Plate • Calories: 338 • Fat: 20.4 g • Carb: 7.3 g • Fiber: 3.9 g • Protein: 25.8 g • Sugar: 2.8 g • Sodium: 658.5 mg

Ingredients:
2 Whole Large Eggs
1 Oz. Deli Reduced Sodium Ham
1 Oz. Reduced Sodium Deli Turkey
1 Tbsp. Skinny Spinach & Basil Pesto
1/4 Avocado, Sliced
Salt & Pepper to Taste

Directions:

Lightly coat the inside of a skillet with non-stick spray and cook your ham and turkey over a medium heat, just to give it some color/caramelization.

Once done, plate the ham and turkey and again lightly coat the inside of your skillet with non-stick spray.

Cook your eggs to your liking. I like mine over easy.

Carefully place your cooked eggs atop your prepared ham and turkey and top with the Skinny Spinach & Basil Pesto and avocado.

Season with salt and pepper and enjoy right away!
