Greek Pork Kabobs

These Greek Pork Kabobs are easy-peasy lemon squeezy! Whip up a delicious Greek inspired marinade with a handful of spices, olive oil, and lemon. Skewer and grill. These kabobs can be made well ahead of time and kept in the fridge up until you’re ready to grill and enjoy, making them great for a weeknight meal prep!

There really isn’t any way to keep these kabobs light because they’re naturally lean. I went with a pork tenderloin, but chicken would be a great choice of protein here as well.

I served mine with plenty of grilled veggies on the side; zucchini, summer squash, cherry tomatoes, and some shallot. I also served these kabobs with a pearled couscous and a plate of Mediterranean inspired goodies such as hummus, pita, olives, and feta cheese.

All in all this was a great ‘family style’ dinner that the whole house got to gather around the dinner table to enjoy.
