Greek Pita'za

It’s pretty common knowledge that in this house, we have pizza (in one form or another) at least once a week. This time around, I decided to have a little more fun with it than usual. And I even had the aded bonus of having my mini-me chef in the kitchen to help!

As is often the case, I asked my daughter if she wanted to help out with dinner. Surprisingly enough, she actually said yes to me this time! It’s been a long stent of her not wanting to. Good thing I had something simple and easy planned. During these last couple of months ahead of summer, I’m looking for all the hacks on quick and easy eating. And this pita or naan crust pizza is perfect.

In going with the pita style whole wheat crust, I decided to make the pizza into one that’s inspired by Greek and mediterranean flavors. So, I started the pizza off with some pesto, which can you believe… my kid tried it and wasn’t entirely offended? Yup! On top of that was some pizza cheese, then layers of chicken, zucchini, tomatoes, feta, and at the end of it… ttzatziki!

I’m not normally a fan of ttyatziki sauce because I can’t stand cucumbers. But, this one was made with pickled cucumbers and was local, so I had to try it. And I definitely like ttzatziki with the pickled cucumbers instead.

There you have it! One quick, easy, and delicious pita’za that you can whip up in well under 30 minutes for a fun twist on pizza night!
