The Forking Skinny Dinner Plan (Week 1)

For the next few weeks (maybe even through the summer) I'll be putting out these Skinny Fork Dinner Plans as a test run to see how they do and if they are enjoyed. Please feel free to let me know your thoughts and how you've enjoyed them.

These dinner plans are based off of a 4 person family and include the meal plan and shopping list for your convenience.

I've also created the shopping list with the notion that you have basic spices and pantry/kitchen staples on hand. So, you'll want to double check the recipes and the shopping list to be sure that you have everything you need.

Below you will find the shopping list and weekly meal plan.

Skinny Fork Dinner Plan (Week 1)

Monday: Healthified Crock Pot Teriyaki Chicken Bowls
Tuesday: Healthified 7 Ingredient Chili + Toppings
Wednesday: Leftover Healthified 7 Ingredient Chili Dogs + Baked Veggie Chips
Thursday: Cheesy Spinach & Kale Verde Enchiladas + Reduced Sodium Black Beans
Friday: Kid's Choice 'Family' Night!
Saturday: Pizza Night!
Sunday: Skinny Monte Cristo Sandwiches + Steamed Broccoli


Shopping List:

Healthified Crock Pot Teriyaki Chicken Bowls:
2 Lb. Boneless Skinless Chicken Breast
1/2 C. Onion
1/2 C. Agave (Honey works too!)
1/2 C. Reduced Sodium Soy Sauce
1/4 C. Rice Wine Vinegar
2 Garlic Cloves
1 Tbsp. Fresh Ginger
1/4 C. Cold Water
3 Tbsp. Cornstarch
3 C. Cooked Rice
3 C. Broccoli Floretes
1 1/2 C. Carrot Slices

Healthified 7 Ingredient Chili:
2 Cans Beans (I used 'No Salt' Red Kidney & Black Beans.)
1 Lb. Extra Lean Ground Beef
1 White Onion
2 Cans 'No Salt' Diced Tomatoes with Green Chilies
1 Can 'No Salt' Diced Tomatoes
1/2 C. Red Enchilada Sauce
1 Tbsp. Chili Powder

Toppings:
1/4 C. Shredded Reduced Fat Cheddar Cheese
1/4 C. Plain Fat Free Greek Yogurt
2 Tbsp. Green Onions

Healthified 7 Ingredient Chili Dogs:
4 Whole Wheat Hotdog Buns
4 Turkey Hotdog Weiners

Toppings:
1/4 C. Shredded Reduced Fat Cheddar Cheese

Cheesy Spinach & Kale Verde Enchiladas:
1/2 Large Yellow Onion
1 (15 Oz.) Can Verde Enchilada Sauce
6 Oz. Stubb's Green Chile Anytime Sauce (Or more Verde Enchilada Sauce.)
1 Tbsp. Whole Wheat White Flour
10 C. Baby Kale & Baby Spinach Blend
1 Garlic
1 1/2 Tsp. Taco Seasoning
8 Whole Wheat & Corn Tortillas
1 1/2 C. Reduced Fat Shredded Mexican Cheese Blend
1 1/2 C. Fat Free Shredded Cheddar Cheese

Side:
Reduced Sodium Black Beans

Skinny Monte Cristo Sandwiches:
8 Slices Whole Wheat Bread (Mine was 60 calories a slice.)
8 Oz. Smoked Turkey Breast
12 Thin Slices Reduced Fat Swiss Cheese (Mine was 35 calories a slice.)
8 Tbsp. Fat Free Milk
4 Egg Whites
4 Tbsp. Raspberry Preserves
2 Tbsp. Dijon Mustard
1 Tsp. Orange Juice

Side:
3 C. Broccoli Florets (Fresh or Frozen)
