Detox Rainbow Salad

I'm busy getting my body back to health this week after over a month of being sick with one thing after the other. If there's anything that can help give the much needed health boost to my system, it's this salad.

There's so many good things in this salad that I can hardly stand it!

First there's the rainbow slaw which consists of red cabbage, hearts of cauliflower, carrots, and broccoli. The red cabbage is an anti-inflammatory and antioxidant rich food. Cauliflower? That's another antioxidant rich food that also boosts detoxing the body. Carrots are well known for their antioxidants and beta-carotene. And finally the broccoli, which is known to relieve stress and detox the body!

I added in the romaine to make this more of a 'salad', and also because it's extremely low calorie and has a very high water content to help rehydrate the body. That isn't to mention that it's full of great nutrients.

Red Pepper is yet another anti-inflammatory and also has possible anti-cancer benefits.

The avocado was a last minute addition because well... who doesn't love an avocado? While it may be higher in fat, they are healthy fats and well worth the calories. Avocados are great for the heart, are an anti-inflammatory, and so so much more.

Those sesame seeds are helpful little guys too! They are full of beneficial minerals that can help relieve arthritis. They also vascular and respiratory health!

The Skinny:
Servings: 2 • Size: About 2 Cups • Calories: 245.8 • Fat: 17.2 g • Carb: 24.7 g • Fiber: 13.5 g • Protein: 7.9 g • Sugar: 7.7 g • Sodium: 62.5 mg

Ingredients:
2 C. Rainbow Slaw, Dry
2 C. Romaine, Chopped
1/2 Medium Red Bell Pepper, Diced
1 Avocado
2 Tsp. Sesame Seeds
Salt & Pepper to Taste

Directions:
Combine the slaw, romain and red bell together in a large bowl.

Toss to mix together.

Plate the salad and slice the avocado to divide evenly among dishes.

Sprinkle with sesame seeds and salt & pepper to taste.

Add your favorite dressing!

I used a ZERO calorie sesame ginger dressing by Walden Farms.
