Crock Pot B.B.Q. Shredded Beef

It was Teacher's Appreciation this week at my little one's school, and the parents all hold an Annual potluck accordingly; serving the teachers breakfast, lunch, and even a dessert. As part of the potluck for the teacher's I decided I wanted to take something that was versatile and well liked by all, shredded barbecue beef!
B.B.Q. anything is a staple around here and it's probably even a law somehow that every Texan is required to eat something barbecued at least once a week. Otherwise you might lose your license to grill. Hah!
This easy to toss together meat makes enough to fill a crowd and only takes a whopping 5-10 minutes to prepare. And with a native Texan Bar-B-Q Sauce like the Original flavor of Stubb's, it would be tough not to love it.
I went with the Original Bar-B-Q Sauce flavor since I was going for something more traditional today. All of Stubb's sauces, rubs, marinades and cooking sauces are certified gluten-free, contain no artificial preservatives, flavors, colors, MSG, or high fructose corn syrup; all things that I love to hear.
I didn't know this before, but Stubb's started in a small BBQ restaurant in Lubbock, Texas - just outside of where I went to college! These days, Stubb's is the #1 super-premium barbecue sauce in the nation. You don't get much more special than that!
You definitely get a lot out of this recipe, so if you aren't planning this for a large group of people, you could always half the recipe or store leftovers in an air-tight freezer friendly bag and save for a rainy day.
I decided to serve some of what I kept behind from the teachers with some cheesy ranch creamy polenta and some blistered tomatoes. But, this would be great on a slider as I provided to the teachers, or even in a BBQ type taco!

The Skinny:

Ingredients:
3 1/2 Lb. Beef Roast (Top Round Cut)
18 Oz. Original Stub's B.B.Q. Sauce
1 Medium Onion, Diced
1/4 C. Apple Cider Vinegar
1/4 C. No Salt Added Tomato Sauce
3 Garlic Cloves, Minced
2 Tbsp. Brown Sugar
2 Tbsp. Spicy Brown or Dijon Mustard
2 Tbsp. Reduced Sodium Worcestershire
1 Tbsp. Natural Sweetener (Stevia, Truvia, Etc.)
Salt & Pepper to Taste
Directions:
Place everything but the meat into the bottom of a crock pot and stir to combine.
Add the meat to the sauce and cover with some of the sauce.
Secure the lid and cook on high for 6-7 hours or on low for 8-9 hours.
Remove the meat from the sauce and shred with two forks or in the bowl of a stand mixer with the paddle attachment at a low speed.
Toss the meat back in with the sauce and stir to coat it all evenly.
Serve however you wish!
This meat is great as a burger, slider, taco or even on it's own with some creamy polenta and blistered tomatoes!
