Cobb Skewers
Well, all of us girls made it through camping and toobing this weekend. Three of us managed to put an 8 person tent up in all of 15 minutes. I guess the 100 degree heat and blazing Texas sun is one of the best motivators there is. Even being home and in the air conditioned house… I’m still craving cold foods.
These cute little Cobb Skewers have been my cure-all today. They’re cold, crisp, and a great way to enjoy a cobb salad as an appetizer or snack. They’re easy to put together and look pretty impressive. It’s a more ‘fancy-pants’ way to serve a salad as an appetizer anyway.
These bites have damn near everything you’ll find in a proper cobb salad, including hard boiled egg, bacon, turkey, ham and tomato! These can also be made ahead of time so long as they’re kept covered an in the fridge.
I served mine with a side of blue cheese dressing, but ranch dressing or a honey-mustard would have also been a good option. Or even serve them with a variety of dressings for dipping. I also will be using these skewers as part of dinner tonight as a side to some grilled chicken breast.
These can be served as an appetizer, gameday bite, snack, a side for dinner, or even as part of a meal-prep style of lunch.
