Healthified Cobb Egg Salad

It's been a busy week and so far an even busier weekend! My daughter started school back up and we had just managed to climb off the plane from Hawaii in time to do so. So among the jet lag and getting back into the routine of things I was in dire need of quick and easy lunch options.

This Healthified Cobb Egg Salad really hits the spot. It's a fun new twist on one of my favorites, egg salad! Egg salad is always a great snack or lunch option. It's low-carb, easy to make, full of protein and can be delicious when paired with even the most simple of scoopables such as crackers and celery!

So, what is cobb egg salad anyway? Well, I've taken all the flavors of a cobb salad and included it into an egg salad instead. That's right. We're getting all those delicious naughty bits; bacon, cheeses, and even some tomatoes. Plus, we're loaded it up with flavor in the form of some ranch seasoning.

I prefer to make my own ranch seasoning with just a handful of herbs and spices, but you can also use the package mixes that you can buy at the grocery store. Either way, it's going to turn out delicious in the end.

This Healthified Cobb Egg Salad makes for a great make-ahead meal-prep lunch for the week. Divide it evenly and box it up with some celery and crackers and you've got yourself a delicious light little lunch that will keep you full and satisfied without weighing you down.

I used some gluten-free 'seed' crackers to pair with mine and was in lunch heaven!
