Chunky Monkey Blended & Baked Oatmeal

So, you know that famous ice cream flavor that we all know and love? Yeah, I sort of turned that into one of the best oatmeals I’ve ever eaten. And if you aren’t a fan of oatmeal - this might be just the right recipe to get you turned onto it! Blending up the oats into more of a powder takes away that oat texture but you still get all the health benefits.

This Chunky Monkey Blended & Baked Oatmeal ends up being vegetarian and gluten free. The oats and banana are pureed together before chocolate and walnuts are stirred in. It’s all baked up together to make two servings of a delicious ice cream inspired treat.

Oatmeal is oatmeal and there really isn’t much to do to this oatmeal to make it any better-for-you since there’s already fairly simple and straight forward ingredients in here. Of course, you could swap the sweetener for sugar, honey, agave, whatever float your sweet boat.

Make this oatmeal ahead of time, cover and store it in the fridge to reheat and eat the next day or two. If it lasts that long without being gobbled up that is.
