Chipotle Butter Infused Pork Tenderloin (Crock Pot)

I've been in meal prep. mode this week while I get ready for another upcoming trip this weekend for Halloween. I'm taking my little Ice Queen to my 'home town' to trick or treat with friends and family there. In the midst of it, I wanted to keep myself sane with just cooking a couple of meals that I could re-heat easily through the week.

One of the things that I wanted to cook up was this versatile pork tenderloin. Since I've been super busy, I thought it would be a great time to get out the old crock pot to cook this batboy up. While I wanted to keep the pork interchangeable, I also wanted it to have a lot of really good flavor.

So, I got out my fun little injector needle and my Stubb's Chipotle Butter sauce which I injected directly into the pork prior to cooking. I also coated the pork with a nice dense crust of Stubb's Pork Rub for an added boost of flavor.

The tenderloin cooked up beautifully and ended up being such an easy thing to do that I was all too entirely thrilled with the whole thing. Easy peasy lemon squeezy! I cooked my pork a little longer than I had intended. Like I said, I'm a busy girl right now! Even so, the pork was perfectly moist and so tender that it was just falling apart when I was cutting it.

Since I've also been behaving myself even more this week with heading back to the gym and watching my bread and grain intake, I served my pork with the lightly sautéed zucchini, squash, butternut squash and cherry tomatoes for a perfect paring.

To round it off, I drizzled al little more of the Stubb's Chipotle Butter sauce over the pork, because - why not? I love that Stubb's only puts spices and other simple good stuff into their products.

The Skinny:
Servings: 10 • Size: About 3/4 C. Meat • Calories: 234 • Fat: 9.3 g • Carb: 1.2 g • Fiber: 0 g • Protein: 33.3 g • Sugar: 0.6 g • Sodium: 356.4 mg

Ingredients:
2 1/2 Lb. Pork Tenderloin
3 Oz. (1/3 C.) Stubb's Chipotle Butter, Divided
2 Tbsp. Stubb's Pork Rub
1/4 C. Water

Directions:

Set a large skillet over high heat and allow it to get hot.

Place the pork into the pan and seat on all sides.

Once seared, set the pork aside to cool slightly before handling.

Inject the pork with 2 oz. of the chipotle butter sauce.

Sprinkle the seasoning over the pork and rub it in slightly.

Place the pork, the remaining sauce and the water into the bottom of a crock pot

Secure the lid and cook for 3-4 hours on high or 4-6 hours on low; or until the pork reaches it's cooked temperature.

Remove the pork from the crock pot and cut to slice into evenly divided proportions.

Enjoy right away!
