Chickpea Salad
Chicken salad has to be one of my all time favorite lunch options. But, what happens when you’re trying to lessen the amount of meat in your day? Well, the answer is this Chickpea Salad! It’s a quick, easy to make, and delicious vegetarian alternative to chicken salad.
Now, of course the texture is a little different than it is with traditional chicken salad, but I have to say that it’s a very tasty option for going meatless with the classic chicken salad. And trust me, I’ve made my fair share of actual chicken salad in the past.
Even if you’re not specifically looking for a vegetarian option, this Chickpea Salad is good regardless. I served mine on a giant romaine leave along with apples, a hard boiled egg, and some nuts. But this would be great as a sandwich too!
One of my favorite things about this is that it’s so super quick and easy to make. You don’t have to cook or shred any chicken. It’s just chickpea mashing, a quick mix, and boom! You’ve got lunch ready for a week.
