This has been on the menu twice in the last two weeks, just because it’s so good, so easy, and so full of vegetable goodness. I’ve just been serving it as is, but it would be good and more substantial if paired with some sides or pasta or rice. I' haven’t done that myself, only because I’ve been trying to eat a bit more lighter in the evenings.
