California Chicken & Vegetable Bowl (With Green Goddess Dressing)

The heat of Texas summer is upon me! The last couple of weeks I've been doing everything possible to use my oven as little as I can manage. It's amazing the difference that just a few minutes of the oven being on can make when it's above 90 degrees outside. So, I'm starting to get really creative with creating tasty and easy meals during the busy and rather hot days of summer without having to give up nutrition in the process.

I was wanting something fresh and light that also involved avocado, and then I remembered this Green Goddess dressing that I made a few months back that I was absolutely in love with. So, I decided I wanted to make use of it again in this California style Chicken & Vegetable bowl. Perfect!

The only change that I made to the dressing this time was around was using some fresh basil in placed of the thyme or tarragon that I had used before. Fresh basil just screams summer to me.

Life has been pretty hectic lately, and it's all the more crazy busy in the summer months. We've had a lot of celebrating this year between college graduation, anniversaries, and almost every single birthday of immediate family being within these 3 months of one another. It's a little chaotic to say the least!

This quick and easy meal solution is perfect for a these busy summer months! It's packed with the good stuff, vegetables, protein, and yes... flavor too. All of this and you don't even have to turn your oven on.

Yep, that's right. This is a meal in the microwave. Easy peasy lemon squeezy!

What's better is that this meal is super healthy. The Tyson® Grilled & Ready® Chicken Breast Fillets are 100% natural and made with all white meat with amazing grilled flavor, while the Birds Eye Steamfresh® Protein Blends are the vegetables that everyone loves with added protein for a full meal solution!

This meal is light and yet filling, making four decent sized portions in all of 10-15 minutes. Pretty snappy, right? It's a perfect weeknight meal that you can toss together in no time while not feeling an ounce guilty about what you're giving your family to make those tummies happy.

If you're feeling extra spunky, go ahead and try adding in some fresh mozzarella or feta cheese crumbles!

The Skinny:
Servings: 4 • Size: About 1 1/2 Cup • Calories: 267.8 • Fat: 15.2 g • Carb: 13 g • Fiber: 3.1 g • Protein: 24 g • Sugar: 3.9 g • Sodium: 692.5 mg

Ingredients:
Dressing:
1/3 C. Avocado
1/4 C. Green Onion
2 Tbsp. Fresh Basil
2 Tbsp. Extra Virgin Olive Oil
2 Tbsp. Lemon Juice
2 Tbsp. Light Mayonnaise
2 Tbsp. Plain Fat Free Greek Yogurt
1 Garlic Clove
Salt & Pepper to Taste

4 Tyson® Grilled & Ready® Chicken Breast Fillets
1 Pkg. Birds Eye Steamfresh® Protein Blends (California Style)
1 C. Cherry Tomatoes, Halved
1/2 Medium Zucchini, Spiralized or Diced

Directions:

Combine the dressing ingredients together in a blender or food processor until well blended; set aside.

Cook the chicken and blended vegetables according to package directions.

Chop up the chicken into bite size cubes and combine with the vegetable blend.

Don't know where to fine the Tyson® Grilled & Ready® Chicken Breast Fillets or Birds Eye Steamfresh® Protein Blends (California Style)? I got mine in the freezer section of my local Walmart.

Add in the the dressing, tomatoes and zucchini to the chicken and vegetable blend and stir carefully to combine.

Divide evenly among bowls and enjoy right away!
