Buffalo Chicken Nachos & Blue Cheese Sauce

I... love buffalo chicken. I love it so much that I think I have a well rounded plethora of things I've made in the past. Even so much that I decided I had to take a break from it for a while before I burned every (including myself) out on it.

Being as it's been a hot minute since I've done anything with buffalo flavors, and it's been on my mind a lot, I thought it was time to go and get myself a shiny new bottle of the old favorite. Since I've done my fair share with buffalo sauce in the past, I knew this time around I wanted to do something a bit different. Nachos. ...With - wait for it - ... ... bleu cheese sauce.

Blue? Bleu? I've decided I'm just going to cycle through the two.

So, these nachos are starting off with a base of blue corn chips. Why? Well... they've got a slightly different taste to them and they really make the orange of the buffalo chicken pop with the contrast in bold colors.

Over the chips, I shredded some cooked chicken breast and mixed that together with the buffalo sauce. Then... there's the blue cheese sauce, instead of a 'nacho cheese'. The bleu cheese sauce is ooey-gooey deliciousness that you won't want to miss out on. The sharp taste of the blue cheese is cooling to the spice for the buffalo.

These nachos are magical. I thought perhaps that my mouth might be a little upset since my eyes were seeing nachos and my mouth tasting buffalo chicken, but I'm happy to say, that wasn't the case.

I used some quick cooked chicken breast that I tossed in the instant pot for these nachos. But, really any cooked chicken will work; shredded, diced, chopped, whatever!
