Skinny Buffalo Chicken Lunchbox

This is a short and not so sweet one today. Not sweet at all. In fact, it’s rather spicy! As we’re getting closer to the start of the school year, I’m doing my best to come up with fun and delicious lunchbox ideas for parents and kids alike. This Skinny Buffalo Chicken Lunchbox is one of my newest favorites.

With being quick and easy to make, this low carb, gluten-free, keto friendly lunch is a real winner, winner, chicken… lunch. I loaded this lunchbox up with plenty of fresh veggies and just as much buffalo chicken. And don’t think for a second that I left out the blue cheese or ranch.

To make this lunch even more easy to prepare I left to where you could use whatever cooked chicken you might have on hand. Grilled, slow cooked, smoked, etc. I tossed a couple of small chicken breasts into the instant pot with some broth and cooked it that way.

If you’re not a fan of blue cheese, feel free to try some shredded cheddar. Or if you’re a BIG fan of blue cheese, like I am, try a blue cheese dressing instead of ranch. Other than that you can enjoy this lunchbox however you see fit. Warm, cold, as a salad, as a wrap, or use the veggies as scoops for the chicken.

I prefer to enjoy mine cold and more like a chicken salad (that’s chicken salad - not chicken in a salad.) I have added a few crackers in to help as scoops as needed. Or if I intend to scoop the buffalo chicken, I’ll use carrot sticks instead of shredded.
