Lightened-Up Brown Butter & Bourbon Chocolate Chunk Cookies
These cookies are legit.
They are much a mouthful to say as they are a mouthful to eat. They are absolutely STUFFED full with all sorts of yummy and delicious tidbits of YUM. We’re talking big chocolate chunks, buttered pecans, and YES even BOURBON.
To say that these cookies are full of flavor would be a sad sad sad understatement. I have to admit that I was a bit skeptical that browning the butter would add more flavor, but it is DEFINITELY worth the few minutes of effort. That along with the bourbon… I’m in heaven over here.
So I lightened these cookies up as best as could be done. I used a light butter and substituted in a brown sugar/stevia blend in place of traditional brown sugar. Why? Because it’s less sugar and I have never, not once, minded the swap. If you wanted to take a it a step further, you could also swap the sugar for a natural sweetener.
While these cookies DO take a couple of additional steps; toasting the buttered pecans and making the brown butter, each and every extra moment spent on them is entirely worth it. Don’t. Skip. A thing.
The end result of these cookies was a delicious, decadent, ooey-gooey bite of cookie bliss. Seriously. These cookies go fast. And they are big huge GIANT cookies too. We’re talking almost 1/4 cup of cookie dough to make each one.
