Low-Carb Breakfast Mexican Pizza

Now that the New Year is here, it's time to start thinking about those resolutions! I know that my mom and I have already started ours, and are going on a more low-carb and keto friendly route for the next month (and perhaps beyond).

With a big resolution, you can still have bold flavor. So, we've been working on coming up with fun and clever meal options that meet our new low-carb wants and needs. That's when I decided to bring out this Low-Carb Breakfast Mexican Pizza. Yeah, you know the Mexican pizza that this idea stems from. But, this one is a breakfast version and it's so sooo good.

I started this Low-Carb Breakfast Mexican Pizza out with Mission® Carb Balance Tortillas. I baked the Carb Balance Tortillas to get them to crisp up just enough to give me that 'Mexican pizza' crust texture that I was looking for in these tortillas. Preparing the tortillas warm is best for full flavor. I then loaded them up with eggs, cheese, and just a touch of Pico de Gallo...actually, maybe a little bit more.

For now, these Low-Carb Breakfast Mexican Pizzas will be our go-to breakfast option. If you're wanting to take it even further, try adding some bacon or crumbled breakfast sausage! I added some plain Greek yogurt, a touch of guacamole, and some salsa to mine.

The Skinny:
Servings: 2 • Size: 1 Pizza • Calories: 197 • Fat: 11 g • Saturated Fat: 5 g • Carb: 12 g • Fiber: 2 g • Protein: 12 g • Sugar: 1 g • Sodium: 557 mg

Ingredients:
2 Mission® Carb Balance Whole Wheat Tortillas
2 Whole Large Eggs
2 Tbsp. Milk/Cream
2 Tbsp. 'No Sugar Added' Hot Sauce
1/4 C. Shredded Cheddar Cheese

Optional Toppings: Plain Greek Yogurt, Guacamole/Avocado, Pico de Gallo, Salsa, Bacon, Breakfast Sausage, Etc.

Directions:

Preheat the oven to 375 degrees F. and line a baking sheet with foil or a silicone baking mat.

Place 2 Mission® Carb Balance Whole Wheat Tortillas onto the baking sheet and bake for 5-10 minutes or until crisp and the edges are starting to turn light brown.

While the tortillas are baking, whisk together the 2 whole large eggs and 2 Tbsp. of milk/cream.

Lightly coat the inside of a small skillet with non-stick cooking spray.

Cook the eggs in the skillet over medium heat until scrambled and cooked through.

Once the tortillas are done, remove them from the oven and cover each with 1 Tbsp. 'no sugar added' hot sauce. Followed by the scrambled eggs divided evenly and 2 Tbsp. shredded cheddar cheese.

Place the pizzas back into the oven to bake just until the cheese has melted.

Remove from the oven once they are done and serve right away with any additional toppings and enjoy!
