Blueberry & Coconut Breakfast Quinoa
"Breakfast is the most important meal of the day."
That is something that I think anyone of my generation grew up learning, and to this day I still find it to be true. Starting your morning off right can be essential. Especially when you're trying to eat better and become healthier.
This powerhouse breakfast bowl is not only one of my favorite breakfasts, it's also a great way to control your hunger and power you on through your day. It's full of the good-for-you stuff such as protein, fiber, calcium, and plenty of vitamins, and minerals. And yes, even antioxidants!
I would say that this could be comparable to a bowl of warm oatmeal or a breakfast rice cereal as far as flavor and texture. So if you're a fan of either, then you're sure to enjoy quinoa for breakfast.
Oh, and did I mention that this breakfast is entirely gluten-free and vegan? Yep!
I know, there's a fierce debate about whether honey is vegan or not... but, for the sake of this breakfast I'll say that it is. If you're a staunch vegan, you can always swap the honey out for agave.
To create this de{light}ful breakfast, I started out with quinoa for the grain, which is naturally gluten-free. As if that super food isn't enough, I added in fresh blueberries which are full of antioxidants. These little berries pack quite a punch, and have been proven to fight cancer, help you lose weight and give you glowing youthful looking skin.
Topping everything off, I tossed in some chia for a bonus protein boost to help you feel full longer; chia seeds are one of my most favorite appetite suppressants. There's also some flax seed in there for added fiber and also some texture.

The Skinny:

Ingredients:
1 C. Quinoa
1/2 C Fresh Blueberries
1 C. Silk Light Vanilla Soy Milk
2 Tbsp. Toasted Coconut Chips
2 Tsp. Chia
2 Tsp. Ground Flax Seeds
2 Tsp. Raw Honey or Agave
Directions:
Begin cooking the quinoa according to package directions.
When the quinoa still has a few minutes left to 'sit' toss the blueberries on top and re-cover.
When the quinoa is done, use a fork or spoon to fluff and mix the blueberries around.
Divide the blueberry quinoa evenly among bowls.
Add 1/4 c. light vanilla soy milk to each bowl.
Top each with 1/2 tbsp. coconut chips, 1/2 tsp. chia seeds, 1/2 tsp. flax, and 1/2 tsp. honey.
Enjoy right away!
