Blueberry, Banana & Coconut Parfait

Introducing #TopItTuesday – Tuesday is the perfect day of the week that could use a little bit more love. For my de{light}ful #TopItTuesday, I decided to make a parfait. Not just any parfait either, but one of my most favorite parfaits!

Blueberry, banana and toasted coconut chips - oh my! That's how I add a little flavor to my life. This parfait is a perfect little treat to enjoy fro breakfast, lunch, or even as dessert to stave off that insistent sweet tooth after dinner.

What's better is that this tasty treat is gluten-free and vegan! Plus, with under 350 calories in a rather nicely sized portion there's nothing to feel guilty about - other than not having made it before. The tartness of the blueberries, the sweetness of the banana and yogurt, and the bit of a crunch with the toppings makes this a perfect bite.

I personally like to use frozen fruits for my parfaits. I know that might sound a little strange, but let me tell you why! I love -love- the fruit juices that form with the fruit as it melts from it's frozen state. It almost tricks my mind into thinking that it's something more indulgent than it is, like a syrup or pie filling.

So, while I used frozen blueberries here, you could absolutely use fresh blueberries instead! It just wasn't my preference today.

I decided to use a vanilla yogurt instead of a blueberry flavor for mine, just because I wanted the blueberries and banana to stand out on their own among the sweet and subtle notes of vanilla. I mean... look at that vanilla too! You can see the little specks of vanilla bean in there, yum.

If you wanted to pack this up as a to-go breakfast at work, just be sure that you keep most of the components separate until right before you're ready to ear it. You don't want the granola getting soggy!

5.3 Oz. Vanilla Silk Dairy Free Yogurt Alternative
1/2 C. Blueberries (Fresh or Frozen & Thawed)
1/2 Ripe Banana, Sliced
1 Tbsp. Low Fat Granola
1 Tbsp. Toasted Coconut Chips

Directions:
Not many directions here!

Layer your ingredients in the order you want them.

Enjoy right away!
