Blueberry Oat Bars
I think, just like most out there, I generally go in and out of wanting sweet or savory for breakfast. Most days, savory wins out. This week though, I was in a sweets sort of mood! These Blueberry Oat Bars couldn’t have hit the spot any better. They’re sweet, tart, and perfectly acceptable for breakfast, brunch, or even dessert!
These oat bars are surprisingly easy to make, with really just a handful of pretty standard staple items too. There’s little mixing and no cooking involved. Just a few stirs and some time to bake. Plus, they’re low sodium, vegetarian, and dairy-free too. Good stuff all around.
Lightening these bars up was pretty simple. No butter. Instead it’s applesauce and coconut oil. No added sugar. Pure maple syrup is what we’re using instead. Other than that it’s just oats, egg, flour and berries for the most part!
The hardest thing about making these Blueberry Oat Bars, is giving them the time to cool off before cutting into them. Really. It’s a true test of wills - that is no joke.
One batch of these will give you 9 bars. That’s breakfast (or brunch or dessert) for the entire week. Plus a couple left over. This makes them pretty perfect as a meal prep option for those wanting a guilt-free, easy, and delicious treat.
