Who's busy on the weekday mornings? I am! I am! Morning time is no joke, y'all! I'm the only morning person in the house, so rallying my 6 year old in the morning is exhausting all on it's own. She has literally hid from me to avoid the inevitable morning routine to get her up, out of the house, and off to school.
One way I can manage to soften the blow of the early morning hours is to come up with fun and easy breakfasts that I can lure my daughter (and myself) downstairs with. Cereal? Pancakes? French Toast! This isn't your average french toast thought. How about french toast made out of bagels? Everything is better on a bagel or made with a bagel, even french toast!
One thing I love most about this Blueberry Bagel French Toast is that you can make up a couple of batches on the weekend and have them on hand and ready to reheat for breakfast through the week; giving you a perfect grab-n-go bite!
This recipe is so easy and quick to do that you really could do this on any given morning though if you really wanted to. The light sweetness of blueberry bagels along with buttery goodness is enough to make anyone have a great start to their day.

Ingredients:
1 Whole Large Egg
2 Tbsp. Reduced Fat Milk
1 Tbsp. Natural Sweetener/Brown Sugar Blend
1 Tsp. Vanilla Extract
1/4 Tsp. Ground Cinnamon
2 Blueberry Lender’s® Bagels, Halved
2 Tsp. Smart Balance® Buttery Spread
Directions:
In a small bowl, whisk together the 1 Whole Large Egg, 2 Tbsp. Reduced Fat Milk, 1 Tbsp. Natural Sweetener/Brown Sugar Blend, 1 Tsp. Vanilla, and 1/4 Tsp. Ground Cinnamon.
Heat a large skillet over medium heat and lightly coat with non-stick spray.
While the skillet is heating, make sure you half your bagels!
I found both Lender’s® Bagels and Smart Balance® Buttery Spread in the refrigerated/dairy section of my local Walmart just a hop, skip, and a jump away from one another!
Soak each half of a bagel in the egg mixture for a few seconds per side.
Add about 1 tsp. of Smart Balance® Buttery Spread to the skillet and add in the egg soaked bagels to cook for a couple of minutes per side or until starting to brown.
I cooked mine 2 halves at a time!
Once done, serve right away and enjoy with your choice of toppings!
I used a touch more Smart Balance® Buttery Spread on top along with sugar-free maple syrup, a sprinkle of confectioner's sugar and fresh red berries.
