Blue Cheese Guacamole

If you haven't noticed already, I've been on a little bit of an avocado kick lately. I just can't get enough of these creamy, green, super healthy fruits! I guess that you could even say that I'm a little obsessed with them, which is funny consider that up until about five years ago I thought my mom was crazy for eating 'that green stuff'.

Clearly, I've grown up a bit since then.

Another of my obsessions, and something that I've loved since the moment that I tried it is blue cheese. I swear... I have dreams about it. So, when tasked with coming up with a fun take on a holiday appetizer, I knew exactly what I wanted to do; merge the two together into one ultimate and amazing dish!

This blue cheese guacamole is full of flavor. And I do mean full of flavor. The tang, spice and creaminess of the guacamole along with the sharpness of the blue cheese pair well together, if I do say so myself. Plus, the addition of the blue cheese gives the guacamole a little bit of an elegant or sophisticated nod to an old classic - which is perfect for the holidays.

I served my guacamole with some spiced sweet potato chips that were perfect for dipping and also fall in line perfectly to make this even more of a festive holiday appetizer. Pun totally intended.

The Skinny:
Servings: 8 • Size: About 1/4 Cup • Calories: 106.7 • Fat: 9.2 g • Carb: 6.4 g • Fiber: 3.5 g • Protein: 2.4 g • Sugar: 0.6 g • Sodium: 99.4 mg

Ingredients:
1 Tbsp. Litehouse Basil 'Instant Fresh'
1 Tbsp. Litehouse Bleu Cheese Vinaigrette Dressing
2 Large Avocados, Skinned & Seeded
1 Lime, Juiced
1/4 C. Litehouse Center Cut Blue Cheese, Crumbled
1 Jalapeno, Minced
1 Roma Tomato, Seeded & Chopped
1/4 C. Onion, Minced

Directions:

Combine the 1 tbsp. 'Instant Fresh' basil and 1 tbsp. bleu cheese vinaigrette together in a small bowl.

This brings the basil back into an instantly fresh state!

Add the basil and blue cheese vinaigrette mixture into a medium bowl with the two avocados, juice of one lime, 1/4 c. blue cheese crumbles, jalapeño, tomato, and onion.

Mix until the desired consistency for guacamole is reached.

I like mine pretty mashed up but, still with a few chunks of avocado.

Enjoy right away!

I added a little sprinkle more of blue cheese on top.

Store in an airtight container for up to 3-5 days.
