These Skinny BBQ Beef & Cheddar Bites are a slam dunk! As a Texan, I'm a girl that knows her way around both game-day and BBQ. So, when I'm trying to get into the spirit and prepare for the big tournament, I more often than not combine the two into one perfectly popable bite!

I know that with planning on watching a game with friends and family, it's best to make snacks that are quick, easy, and mostly hands off. That's why I love to use my electric pressure cooker and a few other kitchen hacks along the way.

BBQ in a pressure cooker can sound like a scary thing. How does one get all the needed flavor packed into something that's cooked in just an hour vs low and slow for hours on end? Well, I'll tell you my secret, you season the meat and then cook it in none other than Coca-Cola®! Today I went with Coca-Cola® Zero Sugar for a more guilt-free BBQ beef and it worked like a charm to cook my roast down to be fall-apart tender.

Once the beef was done, I mixed it up with some BBQ sauce and found the best way possible to make them mobile as a grab-and-go snack. TRISCUIT® Crackers are the perfect vehicle for this shredded BBQ beef because they're thick, stand up well to being topped, and their perfect little waves catch all the BBQ goodness without leaving your fingers a mess!

The Skinny:
Servings: 28 • Size: 1 Prepared 'Bite' • Calories: 113 • Fat: 3 g • Saturated Fat: 1 g • Carb: 18 g • Fiber: 1 g • Protein: 5 g • Sugar: 14 g • Sodium: 108 mg

Ingredients:
BBQ Beef:
1 Lb. Beef Eye Round Roast
1 Tsp. Garlic Powder
1 Tsp. Onion Powder
1 Tsp. Sea Salt
1 Tsp. Black Pepper
12 Oz. Coca-Cola® Zero Sugar
1/2 C. BBQ Sauce
1 Medium White Onion, Quartered
2 Garlic Cloves, Minced

Bites:
28 TRISCUIT Crackers
1 C. Shredded Cheddar
2 Tbsp. Chopped Chives

Directions:

Whisk the 1 Tsp. Garlic Powder, 1 Tsp. Onion Powder, 1 Tsp. Sea Salt, and 1 Tsp. Black Pepper together.

Rub the spice mixture in over the roast and place it into the bottom of the pressure cooker.

Heat the pressure cooker to sauté, and once hot, brown and 'seal off' the meat on all sides.

Pour the 12 Oz. Coca-Cola® Zero Sugar over the roast and seal the pressure cooker lid; setting the steam valve to 'sealed'.

Set the pressure cooker to manual, high pressure, for 1 hour and 15 minutes.

Once done, allow the pressure to release naturally (this took mine 10 minutes.)

When the pressure pin has dropped, open the lid and carefully remove the meat. It will be falling apart at this point, so you may need to use a slotted spoon!

Reserve 1/2 C. of the liquid and discard the rest from inside the pressure cooker.

Shred the meat (using 2 forks or the base of a stand mixer with the paddle attachment) and return to the base of the slow cooker along with the 1/2 C. reserved liquid and the bottle of BBQ sauce.

Leave the pressure cooker on the 'warming' setting and preheat the oven broiler.

Line a baking sheet with foil or a silicone baking mat for easy cleanup and set the TRISCUIT® Crackers out in a single layer.

Top each of the TRISCUIT® Crackers with about 1/2 a heaping Tbsp. of the shredded beef and 1 Tsp. of the cheese.

Place the baking sheet in the oven to bake for about 3 minutes or until the cheese has melted.

Carefully remove from the oven and sprinkle with the chives.

Transfer to a serving dish and enjoy right away! Serve with Coca-Cola as a refreshing pairing to these Skinny BBQ Beef & Cheddar Bites.
