Balsamic Strawvocado Sandwich

Happy Birthday to me!

Okay, so my birthday isn't today - it's tomorrow. But, I won't be around my computer for a day or two since I'll be busy bikini-ing it up at Schlitterbahn (the local water park.)

Work hard, play harder. 

This is the perfect sandwich for me. Sweet, tangy, creamy, crunchy bliss.

I've been making this sandwich for a few weeks now. It absolutely screams summer... Outside of the fact that you have to get the broiler on your oven going. Eep!

But, it's totally worth the warm kitchen! 

The only thing that would make this sandwich any better would have been a little dish of balsamic vinegar served on the side for the occasional dip and added tang.

The Skinny:
Servings: 1 • Size: 1 Sandwich • Calories: 317 • Fat: 17.3 g • Carb: 30.2 g • Fiber: 8.3 g • Protein: 21.2 g • Sugar: 5.5 g • Sodium: 701.4 mg

Ingredients:
2 Slices Whole Wheat Bread, Toasted
 
1 Wedge Garlic & Herb Laughing Cow Cheese
1/4 Avocado, Mashed
1/4 C. Sliced Strawberries
1 Tbsp. Reduced Fat Feta Crumbles
1 Slice Reduced Fat Swiss Cheese
1/2 Tbsp. Balsamic Vinegar

Directions:
Set the oven to broil at 550 degrees F.

Place the toast onto a baking sheet and spread each piece with half of the wedge of Laughing Cow.

Next spread the mashed avocado atop each piece, followed by the sliced strawberries.

Sprinkle with feta and drizzle on that balsamic vinegar. 

top with the swiss cheese and place under the broiler until the cheese is nice and melty.

Carefully remove the pan from the oven and place one half of the sandwich on top of the other. 

Cut and serve warm!
