Baked Spicy Chicken & Cheese Taquitos (Sponsored)

This recipe will satisfy game day crowd with ease. It helps too that this is such an easy thing to toss together, leaving you hands free and able to focus on the big game for all but maybe 5-10 minutes of preparation. Just let the chicken simmer for a few hours in a crock pot with RO*TEL and some spices; then shred it and wrap it up inside some delicious taquitos that take no time at all to bake up in the oven.

You can easily double or triple this recipe to suit your needs, your crowd, and the appetites around. These aren't your typical taquitos either, I've left them pretty big and well filled. Since we're using these as part of a game day feast, one (or maybe two at most) would be more than enough for each person to enjoy.

I used RO*TEL 'Mexican Lime & Cilantro' in my chicken and used RO*TEL 'Original' in my queso today. But, you could really use either flavor you desire in the chicken, just be sure that you adjust the nutritional count below accordingly.

You can serve these taquitos with the traditional dips suchs as salsa, queso, guacamole, or sour cream as I did, or... really whatever else you want. A nice southwest style salad would pair well with them too!

The Skinny:
Servings: 6 • Size: About 1 Taquito • Calories: 176.7 • Fat: 6.5 g • Carb: 19.2 g • Fiber: 12.2 g • Protein: 22.5 g • Sugar: 1.8 g • Sodium: 506.7 mg

Ingredients:
3/4 Lbs. Boneless Skinless Chicken Breast
1 (10 .Oz) Can RO*TEL (Any flavor will work.)
1 Tbsp. Taco Seasoning
1/3 C. Reduced Fat Mexican Blend Shredded Cheese
6 Whole Wheat Low Carb Tortillas (Mine were 80 cal. each.)

Directions:

Place the chicken, RO*TEL, and seasoning into the crock pot.

I even stuck my chicken in there still frozen!

Cover and cook on high for 4-6 hours or on low for 6-8 hours.

I was able to find RO*TEL at my local Walmart both in the canned aisle and also displayed near the very front of the store, but their placement may very by store.

Once done preheat the oven to 350 degrees F. and line a baking sheet with foi, lightly coat it with some non-stick spray; set aside.

Remove the chicken from the crock pot and shred.

You can use two forks to do this or the bowl of a stand mixer with the paddle attachment.

Transfer the shredded chicken back into the crock pot and mix everything together.

Most of any leftover juices in the slow cooker should be absorbed back into the chicken pretty quickly.

Place about 1/4 c. of the shredded chicken and 1 tbsp. of cheese into each tortilla; roll them up tightly.

If you want, you can use toothpicks to hold them together while they bake.

Transfer the taquitos seam side down onto the prepared baking sheet.

Place into the oven and bake for 15 minutes and flip over.

Continue to bake for another 10 minutes or until the edges of the tortilla are starting to brown and crisp.

Carefully remove from the oven when done and allow to cool slightly before serving.

I served mine with all the usual suspects.
