Baked Pepperoni Pizza Chicken
If you’re looking for a quick and easy weeknight meal, then look no further! This Baked Pepperoni Pizza Chicken can be prepared ahead of time up until the point of baking, and then tossed in the over just ahead of dinner time. No fuss, no muss. Just easy cheesy chicken!
Keeping things simple and lower in carbs, doesn’t mean that you can’t enjoy it. This chicken, while made with just 4 simple ingredients, is full of pizza flavor and is deeeelicious, if I do say so myself. I love pizza. And I love baked chicken. Put the two together? Pizza chicken!
To start this chicken off, you’ve got to simmer the pizza sauce to reduce it down and thicken it a bit. Otherwise, you’ll just end up with a watery mess of chicken instead of a perfectly baked chicken breast of goodness. Other than the sauce, there’s of course… the cheese! I used a part skim mozzarella cheese and topped it off with pepperoni. But, you can top your pizza chicken however you want.

I served my Baked Pepperoni Pizza Chicken with a side of steamed broccoli and some olives. But a nice cold crisp Italian salad would be a good pairing too!
