Baked Buffalo Chicken Taquitos

It’s tailgating season and sometimes that means you need nothing more than some good buffalo chicken something or another. These Baked Buffalo Chicken Taquitos are loaded with nothing more than that. Buffalo chicken goodness warmed up with some cheese, hot wing sauce, and not much else.

I’ve made my fair share of buffalo chicken things in the past, but these taquitos have to be one of my favorite buffalo chicken bites. They’re super simple to make, and absolutely delish. Plus, you get to make them as mild or spicy as you want!

To keep them light, I used some low carb tortillas that were only 50 calories each. I also swapped in a reduced fat cream cheese, blue cheese dressing, and cheddar! Baking them was a good option too. They get nice and crisp on the edges and are warm and gooey on the inside.

As a side note, I may have rolled mine a little tight and during the baking process some of the filling came out so I just stuffed it back in. To avoid this, don’t roll the taquitos up super tight as they tend to shrink up a little bit when baked.
